Best Banana Muffins

These muffins are flavorful, filling and actually pretty good for you. A wonderful combination made all the better by the fact that they're easy to eat and transport. Plus, the kids love them.

makes 12 regular sized muffins

3/4 cup white flour
3/4 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon

3 mashed bananas
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup applesauce

Combine first 6 ingredients in medium size bowl. Mix remaining ingredients in separate bowl. Stir wet intro dry until just moistened. Spoon into greased muffin pan or liners and bake at 375 degrees for 18-20 minutes.

Yum, thanks! I like banana muffins, but I don't like them with nuts and whatever else people think it would be good to stuff in there. I'll have to try these out!

i might have all the ingredients for these...well, with the exception applesauce, but that's pretty easy to come by. :)

in another few days, we'll have the squishy bananas...

I never make banana bread with good bananas. Whenever we don't get around to finishing a bunch off I throw the blackened one in the freezer. After a few weeks I usually have enough of a stash to make a batch. Then I simply trim the stems off, pop them in the microwave for a few minutes and then squeeze the fruit out like toothpaste. Not terribly appetizing to look at, but it's seriously sweet.

And Meg, I totally agree about the nuts. I can't stand them in baked goods. The whole wheat flour actually provides a slightly nutty flavor of its own though that's a nice complement.
