Blueberry Pancakes

1 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1 Tbsp sugar
1 cup plus 2 Tbsp milk
1 egg
3 Tbsp melted butter
1/2 tsp vanilla
fresh blueberries

Sift together dry ingredients then stir in wet. Pour batter by 1/4 cupfuls onto hot griddle and drop 4 or 5 blueberries on top. Brown on both sides. Serve with homemade syrup.

1/4 cup white sugar
3/4 cup brown sugar
1/2 cup water
1/2 cup light corn syrup
1/2 tsp maple flavoring
1/2 tsp vanilla

Bring first 4 ingredients to low boil in saucepan, reduce heat and continue to simmer for aprox. 7 minutes, stirring frequently. Remove from heat, add flavorings and let stand 10 minutes to thicken.

Serious goodness.

A Friday Find

I love tea. All kinds of tea. Hot, cold, black, white, green, and herbal. My favorites are usually black teas since I don't drink coffee and they can give me a caffeine boost when I need one. So when I came across a tea called Pu-Erh Tuo Cha at Whole Foods the other day I was intrigued. It's described as being full-bodied with notes of sweet molasses and cocoa. Cocoa? I'm there. And now I'm hooked. One of the best things about this loose leaf tea is that one brick will take me through multiple servings and the flavor doesn't become bitter if steeped for a long time. Even Steve, who normally won't touch tea with a ten foot pole, enjoyed it. Now that's saying something.
